Queso Chihuahua, also known as Queso Menonita, is a cheese that originates from the northern Mexican state of Chihuahua. It’s a semi-soft cheese with a pale yellow color and a slightly tangy, yet creamy, taste. This cheese melts easily, making it ideal for a variety of dishes including quesadillas, enchiladas, and chiles rellenos. The cheese was originally produced by Mennonite communities in Chihuahua, hence the alternate name ‘Queso Menonita’.
