Queso Oaxaca, also known as Quesillo, is a white, semi-hard cheese from Mexico. It originates from the state of Oaxaca in the south of the country. Queso Oaxaca is known for its unique string cheese texture, which is achieved by stretching the cheese into long ribbons during the production process. It’s mild in flavor and melts well, making it a popular choice for dishes such as quesadillas and empanadas.
