Café de Olla is a traditional Mexican coffee beverage. To prepare Café de Olla, coffee is brewed together with a mixture of cinnamon and piloncillo (an unrefined cane sugar). This unique combination of ingredients gives the coffee a distinctly sweet and spicy flavor. Traditionally, it is prepared in an earthen clay pot, which gives the coffee its unique flavor and warmth. This coffee is particularly popular in rural areas and during Mexican holidays, such as Day of the Dead celebrations.
