Quesadillas are a widely-loved Mexican dish known for their simplicity and versatility. They consist of a tortilla, typically filled with cheese (and sometimes other ingredients like meats, beans, and vegetables), then folded in half and cooked until the cheese is melted. In some regions of Mexico, like Mexico City, a quesadilla doesn’t necessarily include cheese, contrary to what its name (which derives from ‘queso’, the Spanish word for cheese) might suggest.
